The hike to Mirror Lake at the foot of Mount Hood in Oregon is a hike I highly recommend.  If you get there early enough, there is plenty of parking and almost no one on the trail.  While well maintained and very easy to follow, the trail is not for the faint of heart.  It begins as a gentle climb from the roadway and then all the sudden begins switchbacks up the mountain.  However, once you reach the top, you exit the large old growth trees and get your first glimpse of Mirror Lake with Tom, Dick and Harry mountain rising up behind it.  The loop around Mirror Lake is a fairly flat walk with beautiful views of the lake and Mount Hood.  Just watch out for the little snakes around the sandy area at the west side of the lake.  For the brave of heart, you can take the Tom, Dick and Harry mountain trail to the top of the mountain and get a good view of Mount Hood and Mirror Lake.
